- In a large mixing bowl, whisk together eggs, water, milk, 2tbs salt and 2tbs pepper- until smooth..
- In another large mixing bowl, stir together the flour, 1/4 cup salt, 5tbs pepper and mesquite seasoning. (You can add extra pepper and mesquite seasoning if you want a bit more flavor.).
- Fill a large skillet halfway full of cooking oil. Heat to 365°F (180 degrees C)..
- Preheat oven to 300°F (150 degrees C)..
- Use a fork to pick up one chicken strip at a time, dip it into the egg mixture, then into the flour mixture, back into the egg mixture and into the flour mixture again..
- Place coated strips into the hot oil to fry. Don’t over crowd, cook in batches. I usually do two or three at the same time depending on size. Once chicken is browned on one side, flip over and brown the other side..
- Place your fried chicken on a cookie sheet. Pour the BBQ sauce over the chicken. You can add a little or alot. I just did a little- spread over the tops..
- Bake for 10/15 mins, until the sauce is caramelized onto the chicken..
