To make this sweet in authentic style, bread pieces are deep fried in ghee until crispy and then topped with creamy rabri. So I make this Shahi Tukda (shahi tukra) recipe by skipping the sugar syrup and instead of using rabri, I use custard. This is probably the fastest Shahi Tukda recipe you’ll ever find.

Shahi tukda instructions

  1. Heat a thick heavy bottom pan on low medium heat..
  2. Add in all the ingredients of making rabdi and mix it well..
  3. Keep stirring, and keep collecting the cream to the sides of the pan..
  4. When the mixture reduced to the half of the actual quantity the scrap the cream from the sides of the pan and mix it into the mixture..
  5. Keep stirring and cook for 8-10 minutes on low flame, or till you get the desired consistency of rabdi..
  6. Switchoff the flame and keep the rabdi aside..
  7. Let it cool down completely and if you wish then you can keep it in fridge..
  8. Heat a pan on low flame, add sugar and water just to immerse the sugar..
  9. Prepare a thick sugar syrup by boiling this mixture..
  10. Keep it aside..
  11. Now take bread slices and remove the sides. Cut it into triangles..
  12. Deep fry these bread triangles on low medium flame till golden brown and crisp..
  13. Soak the fried bread triangles in sugar syrup just for few seconds..
  14. Arrange these soaked bread in a serving plate. Pour the prepared rabdi over it. Garnish with nuts and rose petals. Serve chilled..
  15. For making dry shahi tukda..coat the fried and soaked bread pieces with dessicated coconut and serve immediately..
